His wines are known for their precision and purity, with careful vineyard work and restrained use of new oak. Les Folatières is one of Puligny's most celebrated Premier Cru vineyards, set on the hillside above the village, and this 100% Chardonnay shows the classic Puligny combination of finesse, tension and mineral depth.

Tasting Notes: Nose: White flowers, lemon curd, ripe pear and hazelnut with a flinty mineral edge. Palate: Medium to full bodied and finely textured, with citrus, white peach and subtle toasted oak held together by bright, chalky acidity. Finish: Long and saline, with lingering notes of almond and crushed stone.

Serve lightly chilled (around 52-55°F) alongside lobster, seared scallops, roast chicken with morels or creamy aged cheeses such as Comté.
