empirical-ehime-series-cask-03-375ml
Empirical Ehime Series Cask 03 375ml

Empirical is a Copenhagen distillery founded in 2017 by Lars Williams and Mark Emil Hermansen, both alumni of the renowned Noma restaurant, who set out to make flavor-driven spirits outside traditional categories. Their spirits are typically built on a base of pilsner malt and barley koji, fermented with yeasts and techniques borrowed from the kitchen, and often vacuum distilled at low temperature to preserve delicate aromatics. The Ehime Series is a limited run of individually numbered cask releases, and Cask 03 is the most powerful of the set, bottled at a robust 108.6 proof in a small-format bottle.

Tasting Notes: Nose: Concentrated malt and koji, with toasted oak, dried stone fruit and baking spice.
