Their spirits are typically built on a base of pilsner malt and barley koji, fermented with yeasts and techniques borrowed from the kitchen, and often vacuum distilled at low temperature to preserve delicate aromatics. The Ehime Series is a limited run of individually numbered cask releases, and Cask 02 is a small-format bottling of one of those casks, offered at full, characterful strength.

Tasting Notes: Nose: Toasted grain and koji umami, with dried fruit, honey and a hint of citrus peel.
